The Cardamom plant that belongs to the ginger family, being a large and fruity shrub. Cardamom pods are obtained when the fruits are harvested before they are ripe. The pods can be used whole or open to only use the seeds.
Cardamom has a strong, unique flavour that is warm, spicy and sweet with hints of lemon and eucalyptus. Its perfume is intensely aromatic, rich and sweet. It is a key ingredient in Indian curries and pilaf. Use cardamom carefully, as its flavour is very intense.
In India, Cardamom is used to treat mouth infections and aid digestion. It is also good for freshening breath when chewed.
Store in a dark, cool and dry place.
For having a pronounced flavour, start using it in sweets such as puddings and jellies. Only after becoming familiar with its taste, risk in using with salty dishes. It is a very common ingredient in Indian cuisine, in sweet and savoury, doshes, to season rice, and even in drinks like coffee and tea. It is delicious in hot chocolate.
