Sumac gives the dishes a bittersweet, penetrating taste, but is relatively mild, so you can use it generously.
It is widely used in the Middle East and the Mediterranean region to add acidic and spicy flavours to salads and marinades for meat. Romans used it in place of vinegar or lemon, which only came centuries later.
Rub under the meat before grilling for a delicious aromatic flavour.
