The chipotle, is a type of smoked chilli used in Mexican cuisine. It is obtained by subjecting spicy peppers of various species to a long smoking process, mainly of the “jalapeño” variety. Rehydrated chipotle is usually eaten raw. If it is used to cook food, it is preferable to add it at the end of cooking. so as not to reduce the smoky flavor. It can be used in many dishes, such as meat, fish, seafood, lobster, but also sausages, hamburgers, sandwiches, hot dogs, salads, potatoes cooked in various ways, beans and more. It is an ingredient for the preparation of sauces of different types, mixed with other elements.
