Product Description
Produced through a thermal maturation process, without the addition of preservatives or chemical additives. The process is completely natural and takes place in a controlled temperature and humidity environment for about 1 month at temperatures between 50°C and 80°C. This production technique is the same as black garlic and allows us to have a lemon with unique characteristics, changing color, aroma, flavor and texture.
Italian black lemon with a soft and easy to work consistency, completely different from the loomi or black lime. Its taste is a concentrated citrus, with oriental, smoky, toasted and extremely aromatic notes. Thanks to its consistency, it can be used as is by blending it to create a sauce, lamellated with a knife to serve it as is, perfectly suited to pastry making to create desserts combined with chocolate, ideal for creating black lemon ice creams and sorbets. Excellent to combine with fish, carpaccio, raw seafood, to give a citrus concentrate with spicy and oriental notes. It can be dried and pulverized to have an Italian black lemon powder.
Usage Suggestions:
Great with fish, carpaccio and meat, or blending it to enrich sauces and cooking bases. Excellent for flavoring sorbets, ice creams and creams in pastry, perfect combined with chocolate.
