The Nevis Razor Clams in Brine are prepared with a previous manual selection of the best specimens which then go through a process of natural purification. After this phase, they are canned one by one, by hand and with great care to maintain their integrity and texture.
The Razor Clams can be eaten alone, at room temperature, directly from the can or heated slightly on the grill, accompanied by olive oil.
It is recommended to accompany them with dry white wines with little aromatic or with some wood, in addition to dry mallets. It also goes perfectly well with a cold drink like beer or cider.
