Honey and Vanilla Pancakes

These pancakes replace the sugar with honey, and Vanilla Extract is added to really elevate your pancakes. Top with fresh fruit and sliced bananas for extra flavor.

Ingredients

  • 280 grams of wheat flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 360 ml buttermilk
  • 2 tablespoons melted butter and more to grease the pan and cover the pancakes

Preparation Method

  1. In a large bowl, add the flour, baking powder, baking soda, and salt; whisk to combine.
  2. In another small bowl, whisk two eggs until yolks and whites are combined.
  3. In a separate small microwave-safe bowl, add the honey and heat in the microwave for 15 to 20 seconds. Add the beaten eggs, honey, curdled whey, melted butter and vanilla extract and whisk to combine. Using a rubber spatula, gently fold the wet ingredients into the flour mixture until combined.
  4. Preheat a pancake pan or griddle over medium heat. Top with 1/2 tablespoon butter and let melt for a minute or two. Use a ladle or measuring cup to put about 60ml of batter into the pan. For larger pancakes, put in 120 ml. Cook 2-3 minutes on each side, or until each side is golden brown. Lower the heat if necessary. Repeat this step with the remaining batter and add more butter as needed to coat the pan.
  5. Decorate with your favorite toppings. Enjoy!
