Like so many iconic teas, the origins of this hugely popular classic are likely not to lie in pure creativity and tea-making craft, but in pragmatism and trade.
It’s thought that a tea trader found themselves with large amounts of green tea that simply wasn’t selling in Europe – and this enterprising merchant headed to Morocco in search of buyers.
It was those buyers who had the true spark of flavour inspiration. They mixed the green tea leaves with mint and then added sugar, leading to a magical flavour partnership that took the tea to new places. The rest, as they say, is history.
A great Moroccan mint tea is a balancing act: it deserves a high quality green tea that offers all of the gentle, mellow flavour we love, mixed with mint that powerful enough to lend plenty of refreshing menthol, but not so potent that it stifles the tea’s subtleties.
We choose Chun Mee tea from the Hunan Province in central China. Its name translates as “precious eyebrows”, a reference to the arched shape of the leaves. It’s delicate, mellow and light, and we pair it with mint leaves that walk the perfect tightrope of being just-minty-enough.
It’s lovely without adding any extra sweetness, but you might like to add a little sugar or honey for a dash of extra authenticity.
