Coming from the stigmas of the crocus flower, these plants have to be harvested by hand and require special handling to extract the orange filaments.
With a sweet fragrance, similar to hay, it gives a bitter taste to dishes and makes them a luxuriant golden-yellow colour. When used with moderation its strong flavour gives a unique and delicate flavour.
Rich in antioxidants, it is often used for medicinal purposes.

Usually used to cook Spanish paella and Indian yellow rice, it can be used as seasoning for meats, sauces, scrambled eggs, broths or even to make delicious saffron rice recipes. Use it with moderation to avoid an overly bitter taste.
