Grilled Asparagus Salad with Ham and Ricotta

A grilled asparagus salad with ham and ricotta is a real summer sensation.

Preparation Method

  1. Peel the asparagus and cut off the woody ends if necessary.
  2. Place them in a hot frying pan, cooking for two minutes on each side with a drizzle of olive oil.
  3. Season with sea salt and squeeze a little lemon juice over the top.
  4. Arrange the asparagus on a shallow platter over a bed of rockets and cut the Ham slices into strips so that they rest on top of the salad.
  5. Finish the dish by grating the Ricotta on top, sprinkling with a little black pepper and a splash of balsamic vinegar.
