Clotted cream is a thick cream made by indirectly heating full-cream cow’s milk using steam or a water bath and then leaving it in shallow pans to cool slowly. During this time, the cream content rises to the surface and forms “clots” or “clouts”.[1] It forms an essential part of a cream tea.

Usage Suggestions:
Perfect when spread thickly over a warm scone with a dollop of strawberry jam. Is one of the he essential ingredients to a traditional English cream tea. Try it with fresh strawberries, berries or on pies as an indulgent alternative to whipped cream.
