Tasting Set composed with a selection of Cognac VS + VSOP + RSMV + NAPOLEON + XO SILVER from Chateau de Montifaud made in the cru of Petite Champagne.
VS (very special): The VS Cognac from the Chateau de Montifaud presents an evident vine blossom scent and a suggestion to linden blossoms. With notes of sweet grape, fresh stone fruit, apples, vanilla and bright, nutty oak. Fine on the palate.
VSOP (Very Special Old Pale): The VSOP of Chateau de Montifaud, Much older than the minimum of 4 years of ageing required by the regulation, this is a Cognac with an intense aroma of vine flowers and Linden more present than in VS. In slow evolution towards dried flowers. A fruity cognac with pear and apricot aroma. Versatile and fine on the palate.
RSMV (Reserve Speciale Michel Vallet): Several cognacs aged 1 year maximum in new casks then in old casks
Napoleon: A special quality between VSOP and XO in the general ageing classification of Cognac this cognac has also a special position in our range. A blend of more than 10 different eaux-de-vie,all older than the 6 years required by the regulation. Artisanal Distillation with lees, aged in “roux” frenchoak casks then in old casks in our paradise cellar. It is characterized by its notes of dry flowers, vanilla (verypresent), prune and dried fruits. Supple and round on the palate,with a nice “rancio” coming at the end.
XO (Old Extra): Chateau de Montifaud XO Cognac has been aged for between 30-35 years. Simply stupendously delicious. Its long age shines through, with absolutely glorious, dignified notes of dried fruit, dark oak, toasted nuts, baking spices, toffee and baked apples. The high quality grape also provides many of the notes found in the final spirit, with bright, fruity flavours of white peach, honeysuckle and sweet grapes. This is not a Cognac that you will forget in a hurry and is equally appreciated by women.

Usage Suggestions:
Excellent as cocktail base, for appetizer or digestive. They also goes well with scallops cooked with the endive cream.
