This year, in partnership with our supplier Tartuflangue, one of the world’s largest truffle specialists, we decided to sell Black Autumn or Uncinatum truffles.
Fresh truffles can be ordered weekly, between Monday and Wednesday at Socilink and delivery will be made by Express Mail by Tartuflanghe directly to the location of your choice. All Truffles are delivered with a Certificate of Quality and Origin. For more information contact us.
Autumn black truffle (Tuber Uncinatum)
Season: September to January
Origin: Istria
Tuber Uncinatum is the most widespread truffle in Europe. In terms of composition, it is the same as summer black (Aestivum), but prefers shady locations, which is why it differs in terms of flavor, aroma and bulb morphology. The ripening season is between September and January.
Color and Pulp:
• The fleshy pulp (gleba) of a mature Tuber Uncinatum is firm and dark brown, with many fine white lines that do not change color in contact with air. The skin (peridium) is dark and less rough than the skin of the Black Summer Truffle (Aestivum). The flavor and aroma are pleasant and it tastes better than a summer truffle.
Cleaning:
• The truffle should only be cleaned a few minutes before use, in cold water and with a small brush.
• Since truffles are quite delicate, you don’t want to lose precious pieces, so be sure to clean the truffle carefully.
Serve:
• To get the most out of black truffle, it is best to serve it in the simplest way possible – not cooked, but grated or cut into thin slices on a hot plate, which enhances its aroma.
• Ideal to accompany pasta, rice, eggs, raw meat dishes and fish dishes.
• To enjoy the truffle flavor at its best, it should be consumed as quickly as possible (within a few days).
Conservation:
• Wrap each truffle in paper without removing any dirt from the soil.
• Change the wrapper every day.
• Store in the refrigerator (+2°C/+4°C) in a container that must be kept open to allow the truffle to “breathe”. The aroma released during maturation tends to be absorbed by the milk, butter, cheese and eggs stored near the truffle.
Grades:
Every day that a truffle is out of the ground, it loses some weight. As the truffle is a natural product, this is a perfectly normal procedure for the natural development of truffles.
