Cheese Rondelli with Truffles

Cheese rondelli is a dough filled with cheese.

Preparation Method

  1. Heat the oil and add the onion and cook over medium heat.
  2. When the onion begins to wilt, add half the truffles and stir continuously for 3 minutes (stir gently)
  3. Dissolve the vegetable broth in approximately 100 ml of hot water
  4. Add the sparkling wine and the vegetable broth
  5. Leave to cook and when 50% of the liquid has evaporated, add the cream.
  6. Adjust the salt and cook for another 3 minutes, turn off the heat and store the sauce.
  7. In a refractory, line the base with the prepared sauce and arrange the rondellis over it.
  8. Finish with the sauce covering the entire rondelli, add the grated parmesan, black pepper (to taste), and the truffles to finish.
  9. Heat in oven at 200° for approximately 20 minutes
