Smoked Salmon Salad

This smoked salmon salad is a delicious suggestion to try on the hottest summer days. It can be served as a starter or as a main dish.


Preparation Method

  1. Blanch the asparagus for about 5 minutes in boiling salted water.
  2. Drain them, cut them into small pieces and sauté them in a frying pan with a drizzle of olive oil for about 3 minutes. Reserve.
  3. Place the salmon cut into pieces in a bowl.
  4. Season with parsley, lemon zest and juice and mix well.
  5. Let marinate for about 10 minutes.
  6. Place the diced cooked beetroot, the arugula, a drizzle of olive oil and a drizzle of balsamic vinegar in a large bowl. Mix well.
  7. Add the asparagus, marinated salmon, pickled red onion and toss again.
  8. Serve immediately.
