Product Description
Capers – contrary to common belief – are not fruits, but immature buds that, if left in the bush, bloom in beautiful flowers. Every year, from late May to mid-August, the caper buds are harvested, separated by size, preserved in sea salt and stirred every day to promote fermentation, to enhance the taste of the small hard green buds.
