Pesto Risotto

Delicious and easy to make, this pesto risotto will surprise you.

Preparation Method

  1. Start sautéing the onion with the olive oil and when it is very soft, add the rice;
  2. Then add the rice and let it fry for a few minutes (on low heat so it doesn’t burn);
  3. Add the white wine and when it starts to evaporate, start adding the vegetable stock little by little;
  4. Soon after, stirring constantly, keep adding the broth as your risotto dries out and while the rice is not soft.
  5. Then the rice is soft, add the cheese and the butter, remove from heat and wait 5 minutes before mixing the pesto;
  6. Finally, adjust the salt and pepper to taste.
