Galette of Apple with Salted Caramel

A simple dessert perfect for surprising friends and family.

  • 200g caramel candies
  • 50g butter
  • 1/2 teaspoon salt or to taste

Preparation Method

For the Caramel:

  1. In a thick-bottomed saucepan melt the sweets until liquid. Remove from the heat and add the butter, stirring constantly. Add the cream, mix well with a fouet and add the salt. Store in a covered jar for up to 15 days in the fridge, heat to leave fluid.

Prepare the dough:

  1. In a bowl mix the flour, sugar, and salt.
  2. Add the chilled butter in small pieces and mix with your fingertips until it forms a moist fluffy mixture of smaller and larger pieces of butter. Add the iced water a little at a time until the dough is still crumbly. Put together in a disk, wrap in plastic wrap, and leave in the fridge for at least 1 hour.

Prepare the filling:

  1. Peel, core, and thinly slice the apples. In a large bowl mix the apples, sugar, flour, and lemon. Leave to rest for 15 minutes.
  2. Open the dough disk into a round shape and put it in a round or pizza pan lined with baking paper. Arrange the apples (without the sauce that formed) in the center of the dough and fold the edges over the apples. Spread a little of the caramel (optional), brush a beaten egg on the edges and sprinkle sugar. Leave in the fridge while you heat the oven to 190 degrees for 20 minutes.
  3. Bake for about 45 minutes, until golden and the fruit is soft. Leave to cool for 20 minutes, transfer to a plate and serve with the remaining caramel.
