Celebrated for its smooth, dense texture and rich, butttery flavour, it is often compared to clotted cream. The cheese was named after Jean Anthelme Brillat-Savarin, the renowned epicure an writer. The one used in these biscuits is double-cream from Fromagerie Delin, an independent, family-run cheese dairy in Burgundy that champions local milk, artisanal methods and regional identity.
