Cayenne is made from dried and ground chili pods. It belongs to the chili and jalapeño family.
Cayenne pepper has been used for thousands of years in the West Indies and Central and South America.
It is a red orange powder with little aroma but has a very spicy flavour, followed by an intense heat.
Widely used in Mexican cuisine, it can also add flavour to spicy Indian stews. It is a coloured garnish for light dishes like pates and sprinkled over cookies.
Cayenne is believed to aid the digestive system and protect the heart and circulatory system. It also has lots of vitamin A, C and B.
