A wild Turkish herb from the same family as oregano and thyme. Zahter grows in southern Turkey, especially near Kilis and Antakya.
Zahter has long, thin leaves and in spring, it is harvested by hand and quickly stored in sunflower oil and vinegar. This ensures that the delicate flavour of the herb is not affected.
Usage Suggestions:
Use:
– No cooking or high heat
– In a salsa verde
– As a jelly with grilled meat
– As an accompaniment to focaccia
