Avocado with egg and chilli sriracha

Breakfast, lunch or dinner – this recipe is delicious for any time of day.

Preparation Method

  1. Cut the avocados in half and scoop out some of the flesh from each one before arranging the avocados on a baking tray.
  2. Carefully place an egg in the centre of each avocado half and sprinkle 1 teaspoon of Sriracha Chilli Seasoning on each egg (add more if you wish).
  3. Cut the bacon into pieces and sprinkle over each of your eggs. Place in the oven and cook for 12-15 minutes at 220ºC.
  4. Remove and top with a sprinkling of fresh herbs and serve with roasted/fresh tomatoes to add a touch of colour to the dish.
