Mexican Emperors Red Rice

This rice originally reserved for the Chinese emperor is a brown rice. It has a subtle, delicate flavour and is very rich in fibre, vitamins and minerals. It can be cooked in a salad, or as an accompaniment to meat, fish or vegetables.


Preparation Method

  1. In a frying pan, add a little olive oil and sauté the onion until golden. Add the rice and stir.
  2. Add the vegetable stock. Cover and cook over a low heat for about 20 minutes, stirring regularly, or until the rice is cooked and the liquids are well absorbed.
  3. Then add the red beans, corn and chopped fresh tomato. Let it simmer for a few minutes. Before serving add the crushed peanuts.
