Preparation Method

For the Sauce:

  1. In a mortar, crush the cloves, cumin, fennel leaves, unground black pepper, and salt. Place the obtained mixture in a large roasting pan and add the herbs (rosemary, bay leaf, and thyme) and the garlic, all previously chopped.
  2. Add the zest of the orange and its juice, a tablespoon of balsamic vinegar, and four tablespoons of the Pimentón de La Vera Picante Smoked Paprika DOP.
  3. Finally, we add a bottle of Ketchup, and a drop of olive oil and mix them intensely

For the spare ribs:

  1. Mix the meat in the roasting pan with the obtained barbecue sauce, wrap with foil and bake in the oven for an hour and a quarter at approximately 180°C.
