Rice for Sushi

The perfect way to make sushi rice is the basis for creating any sushi dish.

Preparation Method

  1. Wash 250g of sushi rice in cold water, stirring in circles. Drain and repeat 3-4 times until the water is clear.
  2. Transfer the drained rice to a heavy-bottomed pan and add 300ml of cold water. Leave to soak for 15-30 minutes.
  3. Put the pan on the fire and cook for 10 minutes with the lid on.
  4. Turn off the heat and let it rest for 10 minutes with the lid still closed.

Make seasonings:

  • Mix 3 tablespoons of Japanese rice vinegar, 2 tablespoons of sugar, and 1 teaspoon of salt in a bowl. For a lighter flavor, reduce the sugar to 1 ½ tbsp and the salt to ¾ tsp.

Season the rice:

  1. Transfer the cooked rice to a bowl and add the seasonings.
  2. Gently fold and cut the rice with a wooden spatula. To avoid breaking up the beans, do not overmix or use a stirring motion.
  3. Cool the rice to body temperature and it’s ready to make sushi.
