Vegetarian lasagne with green lentils du Puy

  1. Bring the water to a boil in a pan. Then add the green lentils and cook for 20 minutes.
  2. Meanwhile, mince the vegetables and a clove of garlic.
  3. Drain the green lentils.
  4. In a frying pan, sauté the vegetables with a dash of olive oil.
  5. Then add the tomato sauce, thyme, salt, and pepper.
  6. Preheat the oven to 180°C.
  7. Prepare the béchamel. Remember it is: butter, flour, and milk.
  8. Add the thyme to your bechamel and mix everything together.
  9. Finally, shape the lasagne by layering the leaves, vegetables, lentils, and bechamel.
  10. Add the grated cheese on top.
  11. Remove from the oven after 30-40 minutes of cooking.
