This version of tabbouleh made with bulgur is perfect for a light lunch.

  1. Cook the bulgur for 10 minutes in boiling salted water, drain, and leave to cool.
  2. Chop the herbs and onions, finely chop the tomatoes.
  3. Season the tabbouleh with lemon juice, olive oil, salt, and pepper.
  4. You can add a few pomegranate seeds for freshness.
