Calamarata Pasta with Squid and Soy Sauce

Calamarata owes its name to its resemblance to squid rings. It is an excellent option for pairing with seafood sauces, with prawns and mussels.

  1. Remove the eyes and cartilage from the squid, wash the squid, and cut it into rings the same size as the pasta.
  2. Sauté the garlic clove in a frying pan. Insert the squid rings and sauté for a few minutes. Add the soy sauce and a few tablespoons of water. Add the halved cherry tomatoes and cook at low temperature for another 5-6 minutes.
  3. Cook the pasta al dente. Drain well and add to the squid. According to taste, season with a little salt or alternatively add a few drops of soy sauce.
