Dip of Butter Beans

Butter or white bean dip is delicious, and light and ready in twenty minutes, accompany this dip with vegetables and linguettes.

  1. Drain well the water from the can of white beans. Set aside.
  2. Using the side of a knife, mash the garlic clove and discard the peel. Wash, dry, and finely chop the coriander and chives.
  3. In a large frying pan, add the olive oil, and garlic, and heat over low heat. When fragrant, add the beans and sauté for 1 minute.
  4. Add the coriander, the chives, the chili, the zest, and the lemon juice. Season with salt and pepper to taste and sauté for a further 2 minutes.
  5. Turn off the heat, discard the garlic clove and mash the white beans while still warm with a fork until they form a paste.
  6. Transfer to a bowl and leave to cool. Drizzle with a little olive oil and serve.
