Malt Vinegar Mayonnaise

A perfect accompaniment to the traditional English Fish and Chips recipe


Preparation Method

  1. Whisk the egg yolk and 1 tablespoon of vinegar in a small bowl.
  2. Stirring constantly, slowly drizzle in the oil, drop by drop at first, until the mayonnaise is thick and smooth.
  3. Add 1 tablespoon of remaining vinegar.
  4. Season with salt and pepper.
