Quinoa Salad with Chicken and Tomato

A simple and healthy recipe perfect for any day of the week!

  1. Cook the quinoa for 15 minutes in a pot of boiling water. Then quickly run it under cold water and drain.
  2. Meanwhile, wash the tomatoes, remove the seeds and chop them.
  3. Cut the sun-dried tomatoes into pieces. Wash the cucumber and cut it into thin slices.
  4. In a skillet over medium heat, add a tablespoon of oil and brown the chicken chops.
  5. Then cut the chicken breasts into strips.
  6. Peel and chop the onion (1/2 may be enough). Wash, dry and finely chop the mint.
  7. Place the quinoa in a salad bowl. Drizzle with lemon juice and a spoon of olive oil and three spoons of pumpkin seed oil.
  8. Add the fresh and sun-dried tomatoes, cucumber slices, mint and red onion. Mix well and serve.
