Pork Medallions Glazed with Malt Vinegar

  1. Heat the oil in a large skillet over high heat.
  2. Make the vinegar glace by combining vinegar, sugar, garlic and pepper in a large bowl.
  3. Add the pork to the pan; cook pork about 2 minutes on each side. Pour over the vinegar glaze, reduce the heat; cook, turning, about 6 minutes or until the pork is cooked through and the glace has thickened slightly.
  4. Meanwhile, place the noodles in a large heat-resistant bowl, cover with boiling water, separate with a fork; wait until soft, drain.
  5. To serve, place the noodles in bowls, top with pork.
