Seafood Rice from Praia da Vieira

  1. Heat a pan with the olive oil, onion and chopped garlic cloves and sauté. Add the bay leaf, a sprig of coriander, the tomato pulp and chopped tomatoes and the lobster stock and cook well.
  2. Add 1.2 litres of water, season with salt and when it is boiling, add the previously defrosted shellfish and bring to the boil again.
  3. Add the rice, stir, adjust the salt and season with a little piripiri. Let it cook for about 15 to 18 minutes. Remove from the heat and serve immediately, sprinkled with chopped coriander.
