Tagliolini with Squid and Pumpkin

Pasta with squid is very popular in Italy, especially in the central and southern coastal regions.


Preparation Method

  1. In a pan, sauté the oil and onion. Add the sliced pumpkin, salt, and pepper, cover with the lid and cook over low heat for about 15 minutes.
  2. Clean the squid and cut them into rings. Cook them in a frying pan with olive oil, garlic, a pinch of salt, a pinch of pepper, and a drop of white wine for 15 minutes.
  3. Add the squid to the pumpkin sauce and continue to cook for another 10 minutes.
  4. Finely chop the parsley and add it to the sauce.
  5. Cook the tagliolini in lightly salted boiling water.
  6. Drain the tagliolini, sauté in a pan with the squid and pumpkin sauce and serve.
