Lentils, Sweet Potato and Cabbage Stew

Make stewed lentils with vegetables perfect for a healthy main meal.

Preparation Method

  1. Start by cooking the lentils in salted water for about 20 minutes or until cooked. Set aside.
  2. Cut the courgette, pepper, and unpeeled sweet potato into smaller cubes. Cut the cabbage into julienne and the mushrooms into slices. Set aside.
  3. Heat the olive oil with the chopped onion and garlic. Let it sauté a little and add the spices. Mix well.
  4. Add the tomato pulp and season with salt and pepper. Cook for a further 5 minutes. Then add the vegetables and a cup of water and let the vegetables simmer.
  5. When the vegetables are cooked, add the lentils and rectify the seasoning. Serve immediately.
