Codfish Empanada

Preparation Method

  1. Peel the onion and garlic cloves, slice the onion and mince the garlic cloves.
  2. In a wide pan, heat the butter, the other tablespoon of oil and sauté the garlic and onion until they are browned.
  3. Add the tomato pulp and the cod and let it stew a little, drizzle with the wine and let it cook until it almost runs out of broth. Adjust seasonings, remove and sprinkle with coriander. Let cool.
  4. Place a sheet of parchment paper on a large tray and grease it with oil. Divide the dough into two equal parts and roll out onto 2 equal disks.
  5. Place the filling in the middle of the dough and close the dough, in the shape of a half moon.
  6. Brush the top with olive oil and bake in a preheated oven at 180ºC for 40 minutes. Remove and serve to taste.
